Method
 

  1. Preheat your oven to 180°C (350°F). Line your 8x8-inch baking pan with parchment paper for easy removal.
  2. In a mixing bowl, combine the peanut butter, honey, and melted butter. Stir with a spatula until the mixture is smooth, fragrant, and slightly glossy.
  3. Add the rolled oats, baking powder, and a pinch of salt to the wet mixture. Mix well until all ingredients are evenly incorporated and the oats are coated.
  4. Stir in the chocolate chips and chopped nuts if using, folding gently to distribute evenly throughout the mixture.
  5. Transfer the thick mixture to your prepared pan. Use the back of a spatula or your fingers to press it evenly into the pan, creating a compact, even layer.
  6. Bake in the preheated oven for 15–20 minutes, or until the edges turn golden brown and the smell of toasted oats and chocolate fills your kitchen.
  7. Remove the pan from the oven and allow it to cool in the pan for about 10 minutes. The bars will firm up slightly as they cool.
  8. Using the parchment paper, lift the bars out of the pan and transfer them to a wire rack to cool completely. This helps prevent sogginess and makes slicing easier.
  9. Once cooled, cut into squares with a sharp knife. Serve and enjoy the chewy, chocolatey goodness!

Notes
